Ingredients for 4 servings:
- 600 g chicken fillet(s)
- 3 tbsp butter
- 2 tbsp olive oil
- 3 garlic cloves
- 1 tsp chili powder
- 1 jar white wine
- 200 g crème fraîche
- 80 g dried tomatoes in oil
- 25 g Parmesan
- 1 tsp thyme
- 1 tsp oregano
- 1 tsp rosemary
- 1 handful of basil leaves
- e.g. salt and pepper
- 500g pasta
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour
Season the chicken with salt and pepper. Melt 2 tablespoons of butter and 1 tablespoon of olive oil in a pan over medium heat. Fry the chicken on each side for about 2-3 minutes, then transfer it to a plate. Add the remaining butter and olive oil and fry all the herbs and garlic for about 1-2 minutes. Stir in the wine, sun-dried tomatoes, Parmesan cheese, and crème fraîche. Simmer over low heat until the sauce thickens slightly. Place the chicken and sauce in a baking dish and bake in a preheated oven at 180°C for about 25-30 minutes. Meanwhile, cook the pasta. I usually use tagliatelle and serve it with a salad.
