Ingredients for 4 servings:

  • 1 cup Basmati
  • 1 can of sausages (Wiener, 6 pieces)
  • 2 bananas
  • 1 can of corn
  • 1 can peas
  • Oil or clarified butter, for frying
  • salt and pepper
  • curry

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sausages, rice, bananas, spices…..

First, cook the rice with two cups of water using the soaking rice method. It doesn’t have to be Basmati, but I find it works best. Leftover rice also works very well. While the rice is cooking, slice the sausages and bananas, and drain the corn and peas. I didn’t specify the can sizes because everyone likes different amounts of corn and peas. I usually use a small or medium can of corn and a medium can of peas. When the rice is almost done, heat oil or clarified butter in a pan and fry the sausages and banana slices. The sausage slices should start to brown and the banana slices should “melt.” At this point, I usually add salt, pepper, and curry powder, as there’s still enough room in the pan to stir thoroughly. I’ve also found that curry powder likes to be toasted a bit. Now add the peas and corn, and everything heats up nicely. Finally, stir in the cooked rice and continue to cook over medium heat until it becomes mushy. The 4 servings are meant to be served like this, meaning: My boyfriend and I enjoy eating this on our own (we’re pretty full afterward), but it’s also enough for 3-4 people if no one (or not everyone) wants seconds.
