Ingredients for 12 servings:
- 2 eggs
- 120 g margarine
- 120 g powdered sugar
- 160 g flour, smooth
- 1 tbsp vanilla sugar
- ½ tsp baking powder
- 3 tsp lemon juice
- 2 tbsp milk
- 5 apples
- 10 tbsp jam (apricot jam)
- 2 tbsp rum
- 5 tbsp sugar
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Whisk the egg yolks with margarine until fluffy. Stir in the powdered sugar, vanilla sugar, and lemon juice. Stir in the flour, baking powder, and milk. Fold in the egg whites from 2 whites. Pour the batter into a greased and floured springform pan. Peel, core, and quarter the apples, lightly score the tops with a knife, and spread them over the batter. Bake the cake at 180 degrees Celsius for 45 minutes. Mix the apricot jam with the rum and spread it on the still-hot cake. Sprinkle with sugar.
