Ingredients for 14 servings:

  • 500 g flour
  • 250 g sugar
  • 3 eggs
  • 250 g butter or margarine
  • 1 packet of vanilla sugar
  • 1 packet of baking powder
  • 800 g blueberries, for topping
  • Fat and flour for the form
  • 1 egg yolk, for brushing
  • 1 tbsp powdered sugar, for dusting

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 45 minutes

This cake looks like a blueberry pie and was therefore named so by my daughter

Sift the flour and baking powder onto a work surface, make a well in the center, add the eggs, add the softened butter, sugar, and vanilla sugar, and knead into a smooth dough. If the dough is sticky, add a little more flour. Refrigerate for about 30 minutes. Wash and sort the blueberries. Roll out about 2/3 of the dough with a rolling pin on a prepared baking sheet with high edges. Distribute the berries evenly over the dough. Roll out the remaining dough on a floured surface, cut 1 cm wide strips, and arrange them over the blueberries in a lattice pattern. Whisk the egg yolk with a little milk or water and brush it over the lattice pattern. Place the cake in the preheated oven and bake at 180 degrees Celsius for about 60 minutes. Be sure to do the skewer test, as the fruit means the underside will take longer to cook than the top. Cover the cake with aluminum foil early on. Let the cake cool and dust with powdered sugar. Tip: This dough should have a soft texture, so don’t add too much flour. If one baking sheet is too much for you, use only half the ingredients and bake in a springform pan. This cake tastes especially good served with a dollop of vanilla cream.
