American Chocolate Coffee Cake

Ingredients
 

Dough:

  • 0,5 cube Yeast
  • 0,75 cup Lukewarm milk
  • 1 pinch Sugar
  • 3 cups Flour
  • 0,5 cup Sugar
  • 0,5 tsp Salt
  • 1 Egg
  • 1 Egg yolk - for the rest of the egg white, see "Filling"
  • 110 g Butter
  • 1 Egg yolks for brushing - for the rest of the egg white, see "Filling"

Filling:

  • 200 g Chopped dark chocolate
  • 0,5 cup Sugar
  • 2 tsp Cinammon
  • 55 g Butter
  • 120 g Raw marzipan
  • Egg white - left over from the egg f. D. Dough and v. d. For painting

Streusel:

  • 0,5 cup Powdered sugar
  • 0,5 cup Flour
  • 80 g Butter

Instructions
 

Dough:

  • Dissolve the yeast with a pinch of sugar in the milk and let rise for 10 minutes. Mix the flour, sugar, salt and add the egg, egg yolk, butter and the risen yeast. Knead everything into a smooth dough and let rise in a warm place for about 1 1/2 hours until it has doubled.

Filling:

  • Mix the chopped chocolate, sugar, cinnamon and crumbled marzipan. Cut the butter into small cubes and knead in. Then mix in the stiffly beaten egg whites. Provide.

Streusel:

  • Knead all ingredients until crumble forms. Provide.

Completion:

  • Roll out the risen dough into a rectangle (approx. 45 x 45) and spread the filling on top. Leave an edge free all around and brush this with a little egg yolk. Now roll up the dough, press everything down well. Shape the roll into a "U" and twist both sides into a light braid as best you can. Then place this on a baking sheet lined with baking paper, brush with the remaining egg yolk and spread the crumble on top. Let rise again for about 20 minutes. During this time, preheat the oven to 180 degrees (without convection!)
  • Bake the cake for 50 minutes, then turn it down to 150 degrees and bake for another 10-15 minutes. Make a chopstick test. No more dough should stick to it - but the filling can. If the cake turns color too quickly, cover it with aluminum foil.

Annotation:

  • You can maneuver the dough blank into a box shape ........ Then it won't be so flat.
  • The cake doesn't look spectacular, but it tastes divine ............... and there is sure to be something "sticky" from it, but "so what" ....... .......... "enjoy it"
