Ingredients for 12 servings:

  • 400 g flour
  • ½ bag(s) of dry yeast
  • 25 g sugar
  • 1 tsp salt
  • ½ tsp cinnamon powder
  • 55 g butter
  • 260 ml milk
  • 3 egg yolks
  • 235 ml cider
  • 250 g powdered sugar
  • 15 ml sugar syrup
  • Oil for frying

Working time approx. 45 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours

Apple Cider Glazed Donuts

In a large bowl, mix 300g of the 400g flour with the yeast, sugar, salt, and cinnamon. Heat the milk and butter in a saucepan (do not exceed 50°C!). Add the egg yolks to the flour mixture, then knead with a hand mixer at low speed for 2 minutes, gradually adding the remaining flour. Then, on a lightly floured surface, knead into a smooth and elastic dough. Cover and let rest for 10 minutes. Roll out the dough to a thickness of 1.5cm. Using a glass, cut out doughnuts with a diameter of approximately 7cm, then pierce a hole in the center of the circle—ideally with your finger—in a circle. Place the doughnuts on a greased baking sheet, spaced approximately 7cm apart, and let rest for 1 hour. Glaze: Reduce the cider in a saucepan by half for 10 minutes. In a medium bowl, combine the powdered sugar with the hot cider and simple syrup until smooth. Heat the oil in a deep fryer or a saucepan (fill the pan with about 5 cm of oil). Fry 2 to 3 doughnuts at a time for 2 to 3 minutes, turning occasionally. Cool on paper towels. Drizzle with the glaze. Serve warm.
