with dry yeast, makes 10 donuts

Mix the dry yeast in lukewarm water with 1 teaspoon of sugar and let it rise for 10 minutes. Mix together the flour, sugar, vanilla sugar, and salt, then add the yeast mixture and knead everything well with a mixer. Add the melted butter (careful: not too hot!), lukewarm milk, and eggs to the dough and knead well again. This works best with a mixer fitted with a dough hook. Once the dough is well mixed, transfer it to a floured work surface and knead well again with your hands. Return the dough to a bowl, cover with a tea towel, and let it rise for at least 1 hour. Carefully remove the dough from the bowl and roll it out on a floured surface until about the thickness of your thumb. Then cut out the doughnut shapes. Let the dough pieces rise for another hour. Heat vegetable oil in a saucepan to approximately 175°C and bake the dough pieces until golden brown. The doughnuts can then be decorated with chocolate, icing, or powdered sugar, as desired.
