Ingredients for 1 servings:
- 1 eggplant(s) or large zucchini
- 4 slices of cheese
- salt and pepper
- 2 eggs
- Flour
- olive oil
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Spanish starter, also possible with zucchini
Cut the vegetables into thin slices and place a piece of cheese (cut to the size of the vegetables) between each slice. Season the resulting sandwiches with salt and pepper, coat in beaten egg, and then in flour. Fry in olive oil until golden brown. Tip: Serve with tzatziki.
