Ingredients for 6 servings:
- 1.2 kg boneless chicken breast
- 260 g creamy peanut butter
- 60 ml soy sauce
- 60 ml lemon juice
- 2 tbsp vinegar
- 2 tbsp brown sugar
- ¼ tsp fresh garlic, chopped
- 1 tsp chili flakes
- 2 tsp ginger, freshly grated
- Oil for the grill grate
- 2 spring onions, thinly sliced, for garnishing
Instructions
Working time approx. 10 minutes; Rest period approx. 1 day; Cooking/baking time approx. 16 minutes; Total time approx. 1 day 26 minutes
Grilled Peanut Butter Chicken – very good!
Place the chicken breasts in a plastic bag. In a bowl, combine the peanut butter, soy sauce, lemon juice, vinegar, brown sugar, garlic, chili flakes, and ginger. Pour this marinade over the chicken breasts and seal the plastic bag tightly. Marinate the chicken breasts in the refrigerator for 8-24 hours. Prepare the grill by lightly oiling the grill grate. Remove the chicken breasts from the marinade (discard the marinade) and grill for 6-8 minutes on each side. Remove the chicken breasts from the grill, place them on plates, and garnish with the spring onion rings.
