quick nut croissants – keep fresh for a long time
Briefly knead the butter, sugar, cream cheese, egg yolk, and flavoring, then add the flour and quickly knead in. Divide the dough into three equal pieces and let rest for ten minutes. Roll out each piece into a 28 cm diameter circle. Beat the egg whites with the sugar until stiff. Stir in the bitter almond flavoring and nuts. Spread the nut filling onto the dough sheets, divide into 16 pieces using a cake divider, roll into croissants, and bake in a preheated oven at 170°C (convection oven) for about 15-20 minutes. They’ll easily keep fresh for a week in a tin.
