Ingredients for 1 servings:

  • 100 g butter
  • 100 g sugar
  • 2 egg yolks
  • 175 g flour
  • 2 tsp baking powder
  • 150 g sugar
  • 4 egg yolks
  • 6 egg whites
  • 1 pinch of salt
  • 200 g ground walnuts
  • 1 tsp cinnamon

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dough: Beat 100g sugar, butter, and 2 egg yolks until fluffy. Mix the baking powder, salt, and flour and add to the egg-sugar mixture. Spread the dough onto a baking sheet lined with baking paper, folding up the edges of the paper. Preheat oven. Bake for 5 minutes at 200°C. Meanwhile, beat the remaining egg yolks with the sugar until fluffy, then stir in the vanilla sugar, ground walnuts or hazelnuts, and cinnamon. Beat the egg whites with the salt until stiff, fold into the mixture, and spread evenly over the pre-baked dough. Bake for another 17-20 minutes. Let cool slightly, then cut into 2 x 5cm pieces. Storage: Keeps in a pastry tin for about 1-2 weeks.
