Ingredients for 6 servings:
- ½ celeriac, peeled and cut into pieces
- 10 carrots, cleaned and cut into pieces
- 3 stalk(s) leeks, cleaned into rings
- 2 onions, peeled and cut into eighths
- 3 cloves garlic, peeled and crushed
- 2 tomatoes, diced
- 1 sprig(s) lovage
- 1 bunch of parsley
- 1 tbsp, leveled salt, rather less.
- 10 grains of allspice
- Water
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Combine all prepared ingredients in a pot filled with plenty of water and simmer until soft. Add salt sparingly; the salt should only enhance the flavor, not overpower it. Blend with a hand blender; it should be more like a paste, not too runny, and pour into the prepared twist-off jars. Simmer for 30 minutes at 90°C. The ingredients and quantities can, of course, be varied according to your preferences and the season.
