Ingredients for 6 servings:

  • ½ celeriac, peeled and cut into pieces
  • 10 carrots, cleaned and cut into pieces
  • 3 stalk(s) leeks, cleaned into rings
  • 2 onions, peeled and cut into eighths
  • 3 cloves garlic, peeled and crushed
  • 2 tomatoes, diced
  • 1 sprig(s) lovage
  • 1 bunch of parsley
  • 1 tbsp, leveled salt, rather less.
  • 10 grains of allspice
  • Water

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine all prepared ingredients in a pot filled with plenty of water and simmer until soft. Add salt sparingly; the salt should only enhance the flavor, not overpower it. Blend with a hand blender; it should be more like a paste, not too runny, and pour into the prepared twist-off jars. Simmer for 30 minutes at 90°C. The ingredients and quantities can, of course, be varied according to your preferences and the season.
