Ingredients for 1 servings:

  • 250 g flour
  • 4 eggs
  • 250 g sugar
  • 1 pack of anise seeds
  • 1 pinch of ammonium bicarbonate

Instructions

Working time approx. 30 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 30 minutes

Warm the sifted flour in an open oven at 50°C (122°F). Beat the sugar and eggs for 15 minutes until frothy (using a food processor or whisk). Mix the anise and baking powder into the flour and knead into the egg mixture. Line a baking sheet with baking paper and pipe cookies approximately 3 cm in diameter onto the dough using a piping bag. Let them dry overnight in a warm room. The next day, dry the cookies in a preheated oven at 140°C (284°F) for 25 minutes longer than baking. This yields approximately 70 cookies with 20 calories/84 joules.
