Anna's favorite chicken pot

Ingredients for 4 servings:

  • 1 chicken, ready to cook, without giblets (approx. 1.2 kg)
  • 1 bunch of soup vegetables (carrot, leek, celery, parsley root, parsley)
  • 4 potatoes
  • 1 onion(s)
  • 1 tbsp clarified butter
  • Water
  • marjoram
  • Salt
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Clean and dice all the vegetables, or cut the leek into thin rings. Chop the parsley. Sauté the vegetables and parsley in a pot with the clarified butter, add the chicken, and pour in water until it is completely covered. Bring to a boil, then simmer over low heat with the lid tilted for about two hours. Remove any protein deposits with a slotted spoon. Remove the chicken from the pot, discard the skin and bones, chop the meat into small pieces, and return it to the pot. Season with marjoram, salt, and pepper. Even though it doesn’t seem very appropriate, we ate it with white bread, and it was really delicious. It was originally intended for my sweetheart, who had a stomach problem at the time, but because we liked it so much, we’ve had it more often since then, and always with white bread.
