Anneliese's delicious crispy refrigerator croissants

Ingredients for 1 servings:

  • 400 g flour
  • 250 g butter
  • 125 ml milk
  • 2 tbsp sugar
  • 3 egg yolks
  • 1 pack of yeast
  • 1 pinch of salt
  • 150 g plum jam

Instructions

Working time approx. 35 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 35 minutes

Melt the butter and let it cool to room temperature. Mix the yeast with lukewarm milk and knead well with all the other ingredients. Do not let it rise, but cover it in a bowl and let it rest in the refrigerator overnight. The next day, roll out the dough on a lightly floured baking surface to a thickness of about 5 mm and cut out into squares about 10 x 10 cm. Divide diagonally again to form right-angled triangles. Spread a small spoonful of plum jam along the long side of each piece, roll up from the long side, and shape into croissants. Bake on a baking sheet lined with baking paper in a preheated oven at 175°C (fan oven) for about 14-15 minutes. Once cooled, sprinkle thickly with powdered sugar. The result is a wonderfully crumbly pastry that can certainly be filled with other fillings.
