Anne's onion soup

Ingredients for 4 servings:

  • 250 g onion(s)
  • 100 g margarine
  • 40 g flour
  • 1 liter of water
  • ½ liter broth
  • 5 slices of white bread
  • 125 g cheese (Emmental or Reybier), grated
  • nutmeg
  • Salt
  • pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and thinly slice the onions. Heat the margarine and cook the onions until golden yellow. Add the flour and sauté briefly. Then deglaze with a little water and add the remaining liquid. Season the soup with salt and simmer over low heat. Season to taste with salt, pepper, and nutmeg. Toast the white bread and cut into cubes. Ladle the soup into ovenproof bowls. Top with the bread first, then the grated cheese. Place the soup in an oven preheated to 200°C until golden yellow (this takes about 5-10 minutes and depends on the oven) and serve immediately.
