Ingredients for 2 servings:

  • 1 onion(s)
  • 2 garlic cloves
  • 3 tbsp olive oil
  • 1 chili pepper(s), red, dried
  • 1 pinch of dried oregano
  • 1 tbsp parsley, chopped
  • 400 g tomatoes, chopped
  • 250 g penne or other small pasta
  • Salt and pepper from the mill
  • 3 tbsp olives, black, pitted
  • 2 tbsp capers
  • 20 g Pecorino or Parmesan cheese

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Finely dice the onion and garlic. Heat oil in a pan and sauté the onions until translucent. Add the garlic, crushed chili pepper, and herbs and sauté briefly. Stir in the tomatoes, season with salt, and simmer uncovered for about 10 minutes, stirring occasionally. Cook the pasta in boiling salted water according to the package instructions until al dente. Roughly chop the olives. Add them to the sauce with the capers and simmer for about five minutes longer. Drain the pasta, stir into the sauce, and season with salt and pepper. Grate the pecorino over the top. 710 kcal per serving.
