Ingredients for 8 servings:

  • 300 g onion(s), small
  • 2 garlic cloves
  • 2 bell peppers, yellow, green, red
  • 500 g mushrooms, fresh
  • 2 zucchinis
  • 100 g sugar
  • 200 ml vinegar (red wine vinegar)
  • 2 bay leaves
  • 100 ml olive oil
  • 1 bunch of basil
  • Salt and pepper, coarse

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and finely chop the onions and garlic. Wash and trim the bell peppers and cut into large pieces. Trim and trim the mushrooms and zucchini. Slice the zucchini. Halve large mushrooms. Caramelize the sugar in a saucepan until golden yellow. Add the vegetables, onions, and garlic and toss briefly. Deglaze with vinegar and 1/8 liter water. Add the bay leaves. Season with salt and pepper. Cover and simmer for 8 minutes. Stir in the oil. Cover and let stand for about 12 hours. Mix in all but a little basil. Season with salt and pepper. Transfer to a bowl and garnish with basil.
