Mushroom salad

Ingredients for 4 servings:

  • 300 g mushrooms
  • 1 bay leaf
  • ½ lemon(s), the juice
  • 100 ml olive oil
  • 1 clove(s) garlic
  • e.g. herbs (thyme, rosemary, oregano, mint, parsley)
  • salt and pepper
  • chili pepper(s) as required, finely chopped

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean the mushrooms. Then blanch them in salted water with lemon juice and the bay leaf for about 5 minutes. Drain and let cool. Add the mushrooms to a bowl with the remaining ingredients and mix. If possible, let them sit, covered, overnight before serving. Tip: If you prefer, you can also sauté the mushrooms instead of blanching them.
