Ingredients for 4 servings:

  • 750 g potatoes
  • 30 g fat
  • 50 g onion(s)
  • 2 tbsp parsley
  • ¼ liter of milk
  • 3 eggs
  • Salt
  • Paprika powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Steam the peeled, diced potatoes in a little salted water until almost tender. Fry the finely diced onion and 1 tablespoon of parsley in the heated fat, then add the potatoes. Transfer everything to a heatproof bowl and pour over the milk, which has been whisked with the eggs and seasoned with salt or paprika. Heat gently until the eggs are set. Sprinkle with parsley and serve. Instead of onions, you can also season the dish with nutmeg and serve it with a rich sauce.
