Antonia's green celery soup

Ingredients for 4 servings:

  • 2 celery stalks
  • 2 onions
  • 1 kg potatoes
  • 1 liter vegetable broth
  • 150 g crème fraîche

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Clean, wash, and slice the celery. Set aside some of the inner celery leaves. Peel and dice the onion and potatoes. Cook the celery, onion, and potatoes in the vegetable broth for about 20 minutes. Then puree and stir in the crème fraîche. Return to the heat, but do not let it boil. Garnish the soup with washed celery leaves before serving.
