super easy, quick and perfect use of leftovers
Dice the rolls and toss with flour. Whisk the milk, sugar, and eggs together and pour over the bread. Stir everything together and let the bread absorb the liquid. Heat vegetable fat or lard in a deep saucepan. Using 2 tablespoons, form dumplings, similar to semolina dumplings, roll them in the breadcrumbs, and fry in the hot fat until golden brown. Sprinkle the dumplings with cinnamon and sugar and serve with compote or vanilla sauce. There is also a “with a shot” version, in which the dumplings are poured over with mulled wine.
