Appenzeller cheese noodles

Ingredients for 4 servings:

  • 500 g potatoes
  • 250 g cheese (Appenzeller)
  • 200 g pasta
  • 5 onions
  • 30 g butter or margarine
  • 3 sprigs of parsley
  • Salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Wash, peel, and thinly slice the potatoes. Cook the potato slices in boiling salted water for about 8 minutes. Cook the pasta in salted water as well. Drain the potatoes and pasta, rinse in cold water, and drain well. Coarsely grate the cheese. Layer the potatoes, pasta, and cheese in a greased baking dish. Bake in a preheated oven at 180°C (top/bottom heat) for about 15 minutes, watching closely, until golden brown. Peel and slice the onions, and brown in the hot fat for about 5 minutes, stirring occasionally. Wash the parsley, pat dry, and pluck the leaves from the stems. Serve the cheese pasta with the browned onions and parsley leaves.
