Apple and celery salad with mango and carrot juice dressing

Ingredients for 8 servings:

  • 6 stalk(s) Celery
  • 4 apples
  • 2 packs of cashews
  • 150 g cream cheese
  • 150 ml carrot juice
  • 1 lime(s)
  • 2 tbsp mango chutney
  • salt and pepper
  • chili

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes

very refreshing

Cut the celery and the peeled and cored apples into small, thin slices. Finely chop the celery leaves and set aside. Mix the cream cheese with the carrot juice, lime juice, and mango chutney. Season to taste and pour over the apple and celery mixture. Let stand for at least 30 minutes. Before serving, add the cashews (I always chop a little) and the finely chopped celery leaves.
