Fennel and pear salad

Ingredients for 4 servings:

  • 1 bulb(s) of fennel with the green
  • 1 large pear(s)
  • ½ bunch of spring onions
  • 125 g crème fraîche with herbs
  • 100 g cream cheese
  • 1 tbsp tomato ketchup
  • 2 tbsp white wine vinegar
  • salt and pepper
  • Sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Trim the fennel, setting aside the greens for garnish. Wash the bulb, halve, and cut into strips. Peel the pear, cut into eighths, remove the cores, and cut crosswise into thin slices. Trim, wash, and finely slice the spring onions. For the dressing, mix the crème fraîche, cream cheese, tomato ketchup, and vinegar well. Season to taste with salt, pepper, and sugar. Combine the fennel, pear, and onion rings and toss with the dressing. Divide the salad among cocktail glasses and garnish with fennel greens. Serve with fresh baguette.
