Apple and celery salad with wild garlic

Ingredients for 2 servings:

  • 1 apple, e.g. Braeburn
  • 3 sprigs of celery
  • 1 tbsp mixed nuts and seeds or sunflower seeds
  • 3 wild garlic leaves
  • 2 tbsp sunflower oil
  • 1 tbsp balsamic vinegar (apple balsamic vinegar)
  • salt and pepper
  • 1 dashes lemon juice, if desired

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

a quick and fresh spring salad

Cut the apple and celery stalks into pieces, and strip the wild garlic. Mix together the oil, apple balsamic vinegar, and spices to make a dressing. Add the remaining ingredients, stir well, season to taste, and let the salad sit for about 1 hour.
