Apple and Cinnamon Potato Pancakes with Cream Crown

- 4 Pc. Grated apple
- 3 tbsp Brown sugar
- 0,5 tsp Baking powder
- 0,5 tsp Cinnamon
- 0,5 Cup Flour
- 1 Pc. Egg
- 1 tsp Grated lemon peel
- 1 tbsp Butter
- 1 Cup Cream
- 2 tbsp Powdered sugar
- 1 Msp Vanilla pulp
- Chocolate sprinkles
- Coarsely grate the apples. Put in a kitchen linen or tea towel and squeeze out the juice.
- Mix the apples with the brown sugar, baking powder, 1/4 teaspoon cinnamon, flour, an egg and the grated lemon zest to form a batter.
- Heat the butter in a pan and use an ice cream scoop or a tablespoon to add the batter to the pan in portions. Press down a little and fry the potato pancakes on both sides.
- In a bowl, whip the cream until stiff and refine with the powdered sugar and a pinch of vanilla pulp.
- Serve the apple and cinnamon potato pancakes with the cream crown. Serve garnished with cinnamon and colorful chocolate sprinkles.
