Apple and cinnamon waffles with elderberry sauce à la Gabi

Ingredients for 1 servings:

  • 3 large apples, approx. 500 g
  • 200 g sugar
  • 400 ml elderberry juice
  • 1 tbsp lemon juice
  • 1 tsp cinnamon powder
  • 2 large eggs
  • 100 ml rapeseed oil
  • 1 packet of vanilla sugar
  • 150 g instant flour
  • 50 g walnuts, ground
  • 1 tsp baking powder with saffron
  • 100 ml apple juice, naturally cloudy
  • Powdered sugar for sprinkling
  • Rapeseed oil for baking

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

makes 8 pieces

Peel, core, and grate the apples. Toss the apples with the sugar and slowly reduce two-thirds of the apples with the elderberry juice over very low heat until reduced by half. Then purée with a hand blender. Mix the remaining apple-sugar mixture with the lemon juice, cinnamon, eggs, rapeseed oil, vanilla sugar, flour, walnuts, baking powder, and apple juice until well blended. Brush a waffle iron with rapeseed oil and bake the waffles one at a time. Sprinkle them with powdered sugar and serve with the warm elderberry sauce. Makes 8 waffles.
