Ingredients for 12 servings:
- 100 g dates
- 1 small apple (approx. 150 g)
- 1 vanilla pod(s)
- 100 g butter, soft
- 75 g sugar
- 2 eggs
- 1 lemon(s), organic, grated peel
- 1 pinch of salt
- 2 tsp baking powder
- 250 g flour
- 150 ml milk or buttermilk
- 50 g sunflower seeds
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour
Preparation: Pit and chop the dates. Peel and quarter the apple, remove the core, and cut into thin slices. Split the vanilla pod with a sharp knife and scrape out the seeds. Grate the lemon zest. Dough: Beat the butter and sugar until fluffy, stir in the eggs, vanilla seeds, and lemon zest. Mix the flour with the baking powder and salt and stir into the batter alternately with the milk or buttermilk. Mix in the dates, apple slices, and sunflower seeds. Pour the batter into a greased muffin tin or paper baking cups. Bake in a preheated oven at 180°C (top/bottom heat) or 160°C (fan oven) for about 30 minutes.
