Apple and Horseradish Soup

The perfect apple and horseradish soup recipe with a picture and simple step-by-step instructions.

Preparation soup:

  • 1 tbsp Brown butter
  • 1 Diced onion
  • 1 Diced apple
  • 100 g Horseradish
  • 150 ml Cider
  • 500 ml Vegetable broth
  • 0,25 tsp Hot pepper
  • 1 tsp Lemon peel zest
  • 1 tbsp Lemon juice
  • 1 tsp Sugar
  • 200 ml Cream
  • Salt pepper

Soup garnish apple pieces:

  • 0,5 Diced apple
  • 0,5 Vanilla pod
  • 1 piece Cinnamon bark
  • 1 Stripes Lemon peel
  • 1 Bay leaf
  • 2 cl Apple brandy
  • 1 tbsp Brown butter

Preparation soup:

  1. Heat the brown butter, sauté the onion and apple pieces. Pour in apple cider, simmer a little. Add the vegetable stock and let the soup simmer over a low flame for about 15 minutes.
  2. Puree the soup. Add horseradish and spices (paprika, lemon zest, lemon juice, sugar, salt, pepper). Add the cream. Season the soup to taste and add seasoning if necessary.

Preparation of soup garnish:

  1. Cut the apple with the skin into cubes. Heat the brown butter, add the vanilla pod, cinnamon bark, lemon peel and bay leaf. Fry the apple pieces for about 8 minutes on a low flame. Pour in the apple schnapps and let it simmer.

Serving:

  1. Pour the soup into a deep plate, add the fried apple pieces as an insert. Enjoy your meal!
