Apple and Mushroom Soup with Fresh Thyme

Ingredients
 

  • 600 ml Water
  • 600 ml Apple juice naturally cloudy
  • 4 large Apples
  • 200 g Creme fraiche Cheese
  • 4 Vegetable broth cubes
  • 4 tbsp Freshly chopped thyme
  • 1 large Chopped onion
  • 2 tbsp Butter
  • 250 g Mushrooms fresh
  • 2 tsp Honey liquid
  • Salt
  • Pepper from the grinder

Instructions
 

  • 1. Peel, core and roughly chop the apples 2. Fry them together with the chopped onion in butter 3. Clean and halve the mushrooms - (I prefer seasonal mushrooms - the soup tastes delicious even with "normal" mushrooms!) And then close add the apple and onion pieces 4. Now add the water, apple juice and thyme as well as the vegetable stock cubes - simmer for about 10-15 minutes, stir in the honey and puree finely with a hand blender. 5. Stir in the creme fraiche and season with salt and pepper! Serve with creme fraiche and cranberries if you like ... fried onions are also very tasty!
