Apple and leek gratin

Ingredients for 4 servings:

  • 3 apples (Boskoop)
  • 4 stalk(s) leeks
  • 4 tbsp sunflower oil
  • 25 g sunflower seeds
  • 400 g sour cream
  • 300 ml cream
  • 3 eggs
  • 1 tsp salt
  • 1 tsp, leveled pepper
  • ½ tsp nutmeg

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Trim and wash the leeks, then slice into thin rings. Wash the apples, remove the cores, and coarsely grate them. Heat oil in a pan and fry the leeks over medium heat. Then stir in the apples. Dry roast the sunflower seeds in another pan. Mix together the cream, eggs, and sour cream and season with salt, pepper, and nutmeg. Grease a baking dish and pour in the leek and apple mixture. Sprinkle with the roasted sunflower seeds and cover with the sour cream and cream mixture. Bake in a preheated oven on the middle rack at 200°C for about 35 minutes. Serve with potatoes.
