Ingredients for 4 servings:
- 120 g flour
- ½ tsp salt
- 80 g butter
- 500 g leek
- 1 clove(s) garlic
- 2 tbsp oil
- 2 apples
- 2 tbsp lemon juice
- 100 g bacon (farmer’s bacon)
- 3 eggs
- 250 g whipped cream
- 100 g processed cheese (fine cream ham)
- 1 salt and pepper
- marjoram
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Knead flour, salt, butter, and 2 tablespoons of cold water until smooth, then chill for 30 minutes. Wash and slice the leeks, chop the garlic, and fry both in hot oil until translucent. Roll out the shortcrust pastry into a circle, place it in a greased 26cm diameter dish, and pull the string up. Prick the pastry base several times. Bake in a preheated oven at 200°C (electric oven) for 10 minutes. Cut the cored apples into wedges and drizzle with lemon juice. Finely chop the bacon. Mix both ingredients with the leeks (do not continue cooking!). Mix together the eggs, cream, cheese, salt, pepper, and marjoram, if desired. Place the leeks, apples, and bacon in the dish. Pour the egg wash over them and bake for about 35 minutes at 200°C.
