Ingredients for 2 servings:
- 1 stalk(s) leek, large stalk
- 2 small apples, not too sour (e.g. Braeburn)
- ½ lemon(s)
- 1 tsp, heaped horseradish, grated
- 2 tbsp sour cream
- 2 tbsp milk
- Salt and pepper, black from the mill
- Thick juice (agave syrup) or
- sweetener or
- Sugar
Instructions

Clean, wash, and quarter the leek, then cut into thin strips. Sauté briefly to soften it slightly (this works best in the microwave at 700 watts for 3-4 minutes). Let cool. Wash the apples, remove the cores, and cut the flesh into small cubes. Mix the leek and apple pieces in a salad bowl. Squeeze the lemon and drizzle the juice over the apple and leek mixture. Whisk the grated horseradish and sour cream with the milk until smooth, season with salt and freshly ground black pepper, and add agave syrup to taste. Mix the sauce with the salad. Chill slightly before serving.
