Ingredients for 3 servings:
- 1 bunch beetroot, fresh or 2 packs precooked
- 3 spring onions
- 1 small apple, sour
- 1 pack of feta cheese
- some olive oil
- e.g. sea salt and pepper
- possibly arugula

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Wash fresh beets thoroughly and remove the green parts. Steam in the microwave for 25 minutes at 600 watts, then peel under cold water. Use pre-cooked beets straight from the plastic wrapper. Cut the beets and apple into small pieces or strips. Chop the spring onion and feta cheese and mix everything together, then season to taste. Chill briefly. If desired, serve the salad with arugula.
