Apple and nut cake

Ingredients for 1 servings:

  • 420 g flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 ½ tsp cinnamon
  • ½ tsp nutmeg, grated
  • 1 tsp salt
  • 2 m.-sized apples
  • 3 eggs
  • 240 ml vegetable oil
  • 400 g sugar
  • 1 packet of vanilla sugar (bourbon vanilla)
  • 100 g nuts (walnuts or hazelnuts), kernels, chopped
  • 110 g icing sugar, for the glaze
  • 2 tbsp milk, for the glaze
  • Fat and some flour for the mold

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Actually apple-walnut, but tastes better with hazelnut!

Combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a bowl and mix with a hand mixer. Peel and grate the apples, or cut the flesh into small pieces. Preheat the oven to 150°C. Grease and flour a 24 cm round cake pan. Add the apples, sugar, vanilla sugar, vegetable oil, nuts, and eggs to the bowl and mix everything together again. Pour the batter into the pan and bake the cake on the middle rack for about 1.5 hours. Once it has cooled, combine the powdered sugar and milk in a bowl and brush over the cake.
