Ingredients for 1 servings:
- 2 eggs
- 50 g margarine
- 100 g xylitol (sugar substitute) or sugar
- 220 g flour
- 70 g yogurt
- ¾ pack of baking powder
- 130 g plant milk (plant drink), e.g. coconut drink
- some vanilla extract
- 1 tsp cinnamon powder
- 1 pinch of salt
- 2 bulb(s)
- 1 large apple
- 1 tbsp breadcrumbs for the form
- 1 tsp brown sugar
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes
for a 28cm springform or tart tin
Separate the eggs and melt the margarine. Combine the egg yolks and melted margarine with the sugar, flour, yogurt, baking powder, plant-based milk, vanilla extract, cinnamon powder, and salt, and mix to form a smooth batter. Beat the egg whites until stiff and fold into the batter. Peel the pears and apple and cut into thin strips. Sprinkle the bottom of a 28 cm springform pan or tart pan with the breadcrumbs (this prevents the cake from sticking after baking) and pour the batter onto the pan. Arrange the fruit nicely on the cake. Finally, sprinkle with brown sugar (for a light caramelization). Bake in a preheated oven at 180°C (top/bottom heat) for about 35 minutes, then for another 10 minutes at 180°C (fan oven). Note: Of course, you can also choose just one type of fruit; I used what was ripe and soft and needed to be used quickly.
