Wild garlic and ham dumplings

Ingredients for 6 servings:

  • 100 g cooked ham
  • 30 g wild garlic
  • 4 m.-sized eggs
  • 50 g butter, soft
  • e.g. salt and pepper
  • 1 pinch(s) nutmeg, freshly grated
  • 40 g cream
  • 50 g flour
  • 1 pinch of baking powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Preheat the oven to 180°C (top/bottom heat). Line a baking tray (approximately 24 x 34 cm) with baking paper. Finely chop the cooked ham and wild garlic. Separate the eggs and beat the egg whites until stiff peaks form. Cream the butter in a bowl until light and fluffy. Gradually stir in the egg yolks and beat until light and fluffy. Season with salt, pepper, and nutmeg. Stir in the cream. Stir in the flour with baking powder, cooked ham, and wild garlic. Finally, fold in the beaten egg whites. Spread the batter 0.5 to 1 cm thick on the baking tray. Bake in the preheated oven on the middle rack for about 15 minutes until golden brown. Allow to cool slightly and cut into diamond shapes. To serve, simply transfer to soup bowls, pour over hot broth, and enjoy. Tip: The ham dumplings are easy to prepare and are ideal for freezing.
