Apple and pepper salad

Ingredients for 2 servings:

  • 1 m.-large pepper, yellow
  • 1 small apple e.g. Gala, sweet slightly sour
  • 8 cherry tomatoes
  • 1 handful of walnuts
  • e.g. salt and pepper
  • 4 cl olive oil, preferably extra virgin olive oil
  • possibly lemon juice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

With walnuts and cherry tomatoes. A delight with aromatic olive oil! Delicious and healthy.

Wash the bell peppers and apple, remove the seeds, and cut into equal-sized pieces. Wash the cherry tomatoes. Quarter the very small tomatoes and cut the larger ones into eighths. Place everything in a salad bowl. Crush the walnuts with your hands and sprinkle over the ingredients. Season everything with salt and pepper to taste. Then drizzle the ingredients generously with olive oil and mix well. If you like, you can add herbs. Tips: Please use a high-quality oil; good ingredients make a special difference, especially in simple dishes with few ingredients. This salad tastes best when the apple, bell pepper, and tomato pieces are roughly the same size. If you want to save on salt, use just a tiny pinch and add a little lemon juice. You can also sprinkle the apple pieces with lemon juice after chopping them up to prevent them from turning brown.
