Apple and pumpkin jam

Ingredients for 1 servings:

  • 500 g apples, peeled, cut into pieces
  • 500 g pumpkin flesh, cut into pieces
  • 15 g sugar
  • ½ liter of water
  • 1 cinnamon stick(s)
  • ½ vanilla pod(s)
  • 5 carnations
  • 1 orange(s), organic
  • 1 piece(s) ginger, approx. 2 cm
  • 500 g gelling sugar 3:1
  • 1 sachet/s citric acid, 5 g
  • 100 g walnuts

Working time approx. 1 hour; Cooking/baking time approx. 3 minutes; Total time approx. 1 hour 3 minutes

with ginger and nuts

Melt the 15g of sugar in a large saucepan and caramelize the apple and pumpkin pieces. Pour in about 1/2 liter of water, add the orange (cut into pieces with peel), the very finely chopped ginger, and the spices tied in a cheesecloth, and simmer for about 20 minutes. Remove the cheesecloth. Blend everything with a hand blender. Add the gelling sugar and mix, then bring to a boil. Stir in the coarsely chopped nuts and boil for 3 minutes until bubbling. Add the citric acid and test for settling. Pour the jam into sterilized jars and seal immediately.
