Apple-Banana Bread

Ingredients for 1 servings:

  • 200 g wholemeal rye flour
  • 1 packet of baking powder
  • 1 tsp cane sugar
  • 3 bananas
  • 150 g apple, grated
  • 2 eggs
  • 50 g walnuts
  • 1 tbsp maple syrup
  • ½ tsp cinnamon

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Apple-banana bread

Preheat the oven to 200°C. Chop the walnuts, grate the apple, and mash the bananas. Mix together the flour, sugar, baking powder, and eggs. Then add the bananas, apple, walnuts, maple syrup, and cinnamon and stir until a slightly sticky dough forms. Pour the batter into a baking pan lined with baking paper and bake in the oven at 180°C for about 20-30 minutes. Test the doneness with a wooden skewer, and when the bread is done, let it cool. Note: Because of the apple, the bottom of the dough will be slightly moister than the top. Therefore, the bread should be consumed after about four days, as the moisture will cause it to mold more quickly.
