Apple Bourbon Chops

Ingredients for 4 servings:

  • 4 pork chops or rump steaks
  • 1 garlic clove(s), alternatively 1 tsp garlic powder
  • 1 tsp sage, dried
  • 2 tbsp butter
  • salt and pepper
  • 1 tbsp lemon juice
  • 1 onion(s), white
  • 2 apples
  • 5 tbsp whiskey or brandy, e.g. Jack Daniels, alternatively Asbach Uralt or similar will also work.

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

also works with rump steaks, but then sour apples are advantageous

Wash the chops, pat dry, and rub with garlic and sage on both sides. Heat butter in a large pan and sear the chops for 1-2 minutes on each side. Reduce heat and sear the meat for 5-6 minutes on each side, turning frequently, until golden brown. Dice the onions coarsely or finely, as desired. Peel, core, and dice the apples. Remove the chops from the pan, sprinkle with salt, pepper, and lemon juice, and keep warm in the preheated oven. Sauté the onions in the pan juices, with a little more butter if desired, over medium heat for about 1 minute. Add the diced apples and sear for 1-2 minutes. Deglaze with whiskey and simmer until reduced to the desired consistency. Lemon juice and pan juices can be added to taste. Serve with spaetzle, dumplings, potatoes, or pasta.
