Apple bread (from Boskop)

Ingredients for 1 servings:

  • 750 g apples, Boskop
  • 120 g sugar
  • 2 tsp lemon juice
  • 3 tbsp brown sugar
  • 140 g raisins
  • 100 g nuts, whole (walnuts, hazelnuts)
  • 2 tsp cinnamon
  • 400 g flour
  • 1 packet of baking powder

Instructions

Working time approx. 25 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 5 hours 35 minutes

Grate the apples, mix with the sugar and lemon juice, and let rest for about 4 hours. Combine the apple mixture with the brown sugar, raisins, nuts, and cinnamon. Combine the flour and baking powder, sift over the mixture, and mix to form a smooth dough. Line a loaf pan (approx. 26 cm long) with baking paper, pour in the batter, and bake in a preheated oven at 175°C (gas mark 2) on the middle rack for about 70 minutes.
