Ingredients for 4 servings:
- 3 apples, crumbly
- 4 eggs
- 80 g flour
- ⅛ liter milk
- 1 packet of vanilla sugar
- 50 g fat
- 1 tsp, smothered cinnamon
- 2 tbsp, levelled sugar
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Peel and core the apples, and cut into thin slices. Separate the eggs. Whisk the egg yolks in a mixing bowl, then whisk with the flour, milk, and vanilla sugar to form a thick batter. Beat the egg whites until stiff peaks form and fold the beaten egg whites into the batter. Melt a little cooking fat in a pan. Pour in a quarter of the batter and let it slowly set on the bottom over moderate heat. After 2 minutes, place a quarter of the apple slices on the still-wet surface. Using a lid or spatula, flip the pancake over and cook the apple side down. Fold the apple pancake over and keep warm on a preheated plate. Cook three more pancakes using the remaining batter and the remaining apple slices. To serve, mix the cinnamon and sugar together and sprinkle over the pancakes.
