Styrian Apple Sparrows

Ingredients for 4 servings:

  • 400 g flour
  • 1 pinch of salt
  • 1 tbsp oil
  • n. B. Water, approx. 200 – 250 ml
  • 750 g apples
  • 150 g sugar
  • 100 g butter
  • 1 tsp cinnamon

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 10 minutes

Mix flour, salt, oil, and water into a thick dough and beat until it bubbles; this is typical for spaetzle dough. Now place a large spoonful of dough on a cutting board and, using a wet knife, scrape spaetzle into the boiling salted water. Continue this process until all the dough is used. A spaetzle press is also quicker and less romantic, but I find it too uniform. Cook until the spaetzle rise to the surface. Then strain, rinse with cold water, and set aside. Peel and dice the apples. Lightly caramelize the sugar in a pan and add the butter until foamy. Add the apple pieces and a little water and sauté for a few minutes so that the apple pieces are infused but don’t fall apart. Now add the spaetzle and season with cinnamon. An Austrian dream for anyone who loves sweet things. Children especially love it!
