Ingredients for 1 servings:
- 250 g flour
- 1 tsp baking powder
- 80 g sugar
- 1 packet of vanilla sugar
- 1 pinch of salt
- 2 egg yolks
- 100 g butter, cold
- 3 tbsp water, cold, if necessary also 5
- Fat and breadcrumbs for the form
- 6 apples
- 1 lemon(s), juice
- 1 tsp cinnamon
- 1 packet of vanilla sugar
- 4 egg whites
- 80 g sugar
- 1 packet of vanilla sugar
- 1 tbsp powdered sugar for dusting
Instructions
Working time approx. 40 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 2 hours
For the dough, knead the flour, baking powder, sugar, vanilla sugar, a pinch of salt, egg yolks, butter in pieces, and 3-5 tablespoons of cold water using the dough hook on a food processor. Wrap the dough in cling film and chill for 30 minutes. Peel, quarter, core, and wedge the apples. Squeeze the lemon juice over the apples. Add the cinnamon and 1 packet of vanilla sugar, and mix everything together. Preheat oven to 180°C (fan). Grease a 26cm springform pan, sprinkle with breadcrumbs, and spread it out. Roll out the dough, pour it into the pan, pull up an edge, and arrange the apples on top. Bake in the oven on the middle rack for about 20 minutes. For the meringue, beat the egg whites until stiff peaks form. Mix the sugar with 1 packet of vanilla sugar and sprinkle in. Spread the beaten egg whites over the apples. Bake in the oven for about 20 minutes. Dust with powdered sugar.
