Apple – Carrot – Bread

Ingredients for 1 servings:

  • 500 g spelt flour
  • 400 g whole grain flour
  • 3 tsp salt
  • 1 apple (approx. 130 g), peeled and grated
  • 1 carrot(s) (approx. 80 g), cleaned and grated
  • 21 g yeast
  • 1 tsp honey
  • 3 ½ dl water
  • 100 g natural yogurt
  • 100 g hazelnuts, coarsely chopped
  • Water for brushing
  • Hazelnuts for garnishing

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Stays fresh for a long time. Makes 2 loaves.

Mix the flour and salt. Add the apple and carrot. Make a well in the center. Dissolve the yeast and honey in a little water, then pour it into the well along with the remaining water and yogurt. Knead the dough into a smooth dough. Cover and let rise at room temperature until doubled in size. Knead the dough with the nuts and let rise for another 1-2 hours. Then knead again, divide the dough in half, and form 2 loaves. Place on a baking sheet lined with baking paper and brush with water. Bake in the center of an oven preheated to 200°C for 35-40 minutes. If you like, you can garnish the bread with hazelnuts before baking.
