Ingredients for 2 servings:
- 1,000 g water, lukewarm
- 60 g yeast, fresh
- 3 tsp salt
- 4 tbsp vinegar (fruit or wine vinegar)
- 1 kg flour (type 1050 or whole wheat flour)
- 400 g onion(s) (fried onions)
- Fat for the mold
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Dissolve the yeast in the water. Add salt, vinegar, and flour. Stir in with a dough hook, finally stirring in the fried onions. Pour the fairly runny mixture into two greased loaf pans, place in a cold oven, and bake at 220°C (convection oven) for about 1 hour. Tip: Once the bread has risen, cover with aluminum foil to prevent it from overcooking. You can also divide the dough, for example, make one portion with 200g of onions and the other with 200g of seeds (sunflower seeds, flaxseeds, pumpkin seeds, hazelnuts).
