Apple – Celery – Salad

Ingredients for 4 servings:

  • 250 g celery
  • 2 apples
  • 3 tsp lemon juice
  • 1 bunch arugula
  • 200 g goat’s cheese
  • 3 tbsp balsamic vinegar
  • 1 tsp maple syrup (alternatively sugar)
  • Salt
  • Pepper, from the mill
  • 5 tbsp olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with rocket and goat cheese balls

Clean and wash the celery stalks, then slice them diagonally into thin slices. Halve the apples, core them, and slice them thinly. Drizzle with lemon juice. Wash and drain the arugula. Finely chop 4 stalks, mix with the goat’s cheese, and form into small balls. For the dressing, mix together the balsamic vinegar, maple syrup, salt, pepper, and olive oil. Fold in the celery, apples, and arugula. Arrange on a plate and serve with the cream cheese balls. Serve with baguette and a wonderfully chilled Blanc de Noir.
