Apple Cheesecake Dessert

Ingredients for 6 servings:

  • 100 g butter biscuits
  • 20 g butter, melted
  • 200 g cream cheese
  • 1 egg(s)
  • 1 packet of vanilla extract or 1 vanilla pod
  • 40 g sugar
  • 500 g apples
  • 50 g raisins
  • some lemon juice
  • 100 ml water
  • 50 g almonds, chopped
  • some cinnamon

Instructions

Working time approx. 35 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 50 minutes

with biscuit base, for spooning

For the base, crush the biscuits and mix with the melted butter. Then fill the biscuit-butter mixture into small baking dishes and flatten with a spoon. For the cheesecake layer, mix the cream cheese, egg, vanilla and sugar and spread on the biscuit base. Bake in the oven at 150 degrees Celsius for about 10-15 minutes. In the meantime, cut the apples into small cubes and then cook in a saucepan with the lemon juice, water and the raisins for about 5 minutes, until the apples are soft. Strain the apple mixture through a sieve to remove any remaining water. Season with cinnamon and add the chopped almonds. Pour the apple mixture onto the baked cheesecake and refrigerate for about 1 hour.
